These protein rich tofu pancakes made with yeast are very airy and fluffy.
To get the best taste out of these fluffers, a buttery star anise and vanilla syrup is combined and drizzled on top.
You could also use a small can of beer and put in half the amount of milk in this recipe to speed up fermentation.

Ingredients
400g wheat flour
300g white sugar
150g tofu
66g butter
50g semolina
4g yeast
2 eggs
1 star anise
500ml milk
444ml water
1drizzle vanilla extract
3tsp salt
1tsp baking soda
1tsp laos
1drizzle oil
Instructions

1. Put the yeast together with the baking soda and 2 tsp. salt in a room temperature bowl. Add a dash of room temperature milk. Let the yeast activate for 12 minutes at a temperature above 20 degrees Celsius.
Then mix in the wheat flour, semolina and squased tofu with the rest of the milk and let it rest for 2 hours or more 2. At the same time. Warm up a small pan of water. Add a tsp of laos and 1 tsp. salt and the vanilla extract together wth a bunch of sugar. Let this cook and simmer for 15 minutes with the butter while stirring.
Put it in a glass container and let the syrup cool off 3. Put some oil in a hot pan, drizzle some batter inside your pan and twist your pancake. When bubbles have appeared and some spots begin to look dry.
Bake both sides evenly brown and let them rest on a warm plate, perhaps au bain marie with an iron bowl et voilà bon appétit your in culinary heaven!.
