Purple sour cabbage quiche

This isย an easy to make two persons bake-off dish with lots of cheese and goes great together with a salade; the bread is already incorporated inside the dish. A healthy meat and bean quiche, very easy to make. The chickpeas (12-24 hours) and urid whole (6-8 hours) need some soaking time and also it takes a minimum of one hour for the dough to rise. The dish is full off proteรฏne and spicey flavors adding a twist with a sour cream advocado sauce and topped off with some purple sour cabbage. In this magical, fun and healthy recipe we are going to make the sour cabbage turn purple.

Making your own fresh dough from mashed chickpeas, silver grain rice and wheat flower will take some soaking and boiling time but as long as this step is prepared in advance, your gonna do an OK job. A very quick and easy recipe to make once you have prepared the dough and soaked the peas and urid in water. The recipe can be made with taco or cajun spices. Be aware that cajun spices can contain extra salt.

The ovendish can also be prepared few days in advance and baked off when needed. Meat and beans can be varied in whatever kind you like or replaced with tofu or cheese. Accompany your steamy hot beany dish with a salade of choice and serve a refreshing sour cream and advocado dip for ultimate taste enhancement.

  1. 1. Before starting with this recipe, soak the chickpeas and urid whole (6-8 hours) in water (12 to 24 hours) and rinse. If you decide to make fresh beef broth it wil take a few extra hours extra but well worth the wait.

    2. Boiling the dough ingrediรซnts and beany filling:
    You need two pans to cook the beans, rice and Urid whole. In one pan add some salt, boil the chickpeas for 30 minutes, put the silver grain rice in the same pan and cook for another 20 minutes till cooked. Dont worry about overcooking we are gonna mash it all. In a second pot with some salt boil the Urid whole for 30 min and in the end boil the sour cabbage for 10 minutes on top of the beans and presto you have turned the yellow sour cabbage into a purple color. While cooking the filling at step 2 you can go to step 3 to bake the meat and spices.

    3. Put some oil or butter in a saucepan and put in:
    the bay leafs, cloves, (dried) chilli, cummin and cardemom. Then add green pepper, onion and garlic and bake until caramelized. Add the taco or cajun spices, the tomato, a beef broth cube and a pinch of salt. Regularly stir the minced meat in the dish and add some fresh herbs (parsley or thyme). Allow this to cool down.

    4. Mash the silver grain rice and chickpeas,
    (you can keep some aside for your salade) add a drizzle of oil, a tiny bit of luke warm water or beer (if you have it), add 200 grams of wheat or gram flour, add salt, half a gram of baking powder and a pinch of yeast. Mix it up and kneed the dough. Let it rest for about an hour.

    5. While the dough is resting prepare the sauce.
    The advocado cream is a very simple mix of advocado with sour cream. Just add some salt and pepper or some green chilli with fresh herbs.

    6. Take an oven dish, pot or baking tray and butter the insides.
    Gently press the dough and spread out onto the bottom and press the dough against the sides of the oven dish. Put in the meat mixture and on top of that the purple cabbage (beany mixture), top it off with lots of white cheese and fresh herbs. Break an egg on top. smear it all over the dish and put it in a pre heated oven 200C for 45 minutes.

    It is now time to prepare you favorite salad, we will skip this step, because it is too simple to explain and everyone has their own favorite salad. Serve this dish with the salad, the sour cream dipping sauce and a sparkling glass of white wine et voilร , bon appรฉtit your in culinary heaven!

This could be out of religious consideration, tradition or organic awareness. Nevertheless cooking is a process of feeding people in a safe and tasteful way taking notice of quality control, "HACCP," safety, bouncer and hygiene regulations.
