Description

This mediterranean sour cabbage recipe is quite a spicy winter dish because of the fresh green chili peppers accompanied by a juicy ripe yellowish zucchini and some good old fat drippening sausages.
Because it is very hard to add extra pepper into a sausage afterwards you are going to add the spicyness in a different way.

In our other sauer cabbage recipe we explained the origine of the German sauer cabbage recipe. In this one the focus is simple and lays purely on the gravy. You will be spicing up the gravy with green pepper and some caramelized onions. This will be the base sauce that contains all the savory tastings that will enhance the juices from the fat of the original German bratwurst.

Off course you are going to mash the potatoes with butter and milk. You also need to cook the sauer cabbage a bit longer on low fire after adding the milk and butter so the mix will get a dryer texture.

Ingredients
  • 8 crumbly potatoes (1400g)
  • 500 g sauer cabbage
  • 200 g zucchini
  • 3 green peppers
  • 1 small onion
  • 4-6 sausages
  • 150 ml water
  • 100 ml milk or cream
  • 50 g butter
  • 3 tsp salt
  • 0,5 g laurel
  • 0,2 g cloves
Instructions

    1. Peel the crumbly potatoes and cut them into big chunks.
    Boil the crumbly potatoes in a pot with some water and salt until they are almost cooked. Chop the zuchinni, onion and green peppers into big chunks.

    2. Add sauer cabbage,
    cloves, salt and laurel for the last 10-12 minutes of cooking while baking the sausages in some butter or oil in another pan. In the sausage pan... Throw in the zuchinni chunks first then the onions and finally the green pepper chunks. Bake untill caramelized. Add water and add some gravy powder, beef broth (cubes) or a little bit of salt and stir the vegetable gravy, add some more water if the gravy sauce is getting to dry.

    3. Drain all the water from the potatoes with the sauer kraut and remove the cooked herbs.
    Mash the potatoes together with a cup of milk and some butter. Lightly heat this mix on the stove again

    4. Make yourself a nice plate with a scoop of the mixed potatoe mash, a sausage and a big scoop of gravy in a pit on top et voilà, bon appétit, your in culinairy heaven!
